food crazy
for some reason this new house has put me back in the "Lana bakes and makes EVERYTHING under the sun" mood. It's kind of awesome. Get ready to use your imagination, because I totes forgot to take pictures.
Last night: Salmon cakes, on whole wheat buns with aioli, garlic rosemary mashed potatoes, and a side salad.
chocolate chip cookies (the first time using my new tiny (just like yours haley!) oven, man that thing got HOT! the first tray was burnt to a crisp on the bottom, and still raw dough on the top. that's why I always bake chocolate chip cookies first in a new oven. It's my way of testing it out)
Tonight: Baked risotto with tossed green veggies. I've never made risotto before (!!!) I used this recipe from my new favorite food website Veggie num num. It was vegan and delicious. Seriously. I used lemon instead of orange on the veggies, and babe liked it that way. I thought it was a tad too lemoney.
Zucchini muffins! I used this recipe from Smitten Kitchen. But I took out half the oil and replaced it with applesauce. I also did not put in the nuts or cranberry. DELICIOUS!
I also took the cookies from last night, put some vanilla ice cream in the middle and enjoyed a homemade ice cream sandwich.
As soon as I get my scanner/printer plugged in and such, I will show you the note I received from my new roomates, as a thank you for the midnight muffin snacks.
